My Beloved Oatmeal Chocolate Chip Cookie Recipe

Most people sleep on oatmeal cookies! I used to do the same thing. I love my classic brown butter chocolate chip cookies, but I think these oatmeal cookies might just be a bit better. Chewy, a little crispy on the edges, with the perfect balance of sweet and salty.

Ingredients:

  • 2 sticks of softened butter
  • 200g (dark) brown sugar
  • 100g granulated sugar
  • 2 eggs, room temp
  • 1tsp vanilla
  • 1tsp cinnamon
  • 188g AP flour
  • 255g rolled oats
  • 1tsp salt
  • 1tsp baking soda
  • 315g chopped chocolate

Notes:

  • I usually use quick oats since that is what we have, and the cookies still have a perfect chewy texture
  • Beat the butter and sugar until light and fluffy. A kitchen-aid is very useful for this.
  • flaky sea-salt is optional
  • I recommend all chopped chocolate, but chips are fine
  • Perfect cookie for those who like texture, but can't do nuts
  • Bake until edges are toasty, but the center still looks soft

I have found this cookie to be a hit -- even moreso than my classic chocolate chip cookies. Something about the oatmeal and chocolate is really addicting and perfect. Your friends, coworkers, and loved ones will thank you for baking these <3
